Liquid Milk
Real Milk is not generally commercially available in the United States—and won’t be until consumer demand increases. Raw milk can be purchased in some stores in California, Connecticut and New Mexico, but it is not necessarily from pasture-fed cows. However, in many states raw milk can be purchased at the farm and many concerned consumers are forming cooperatives designed to support conscientious dairy farmers and obtain Real Milk directly from the farm. The solution to restrictive state laws is a cowshare program in which farmers keep and milk cows owned by individuals. These are being set up in many states. Cheese
Naturally fermented raw milk cheeses from whole milk given by pasture-fed cows are still made in France, England, Switzerland and Greece. Look for the words “raw milk,” “fresh milk,” or “milk” rather than “pasteurized milk” on the label, which means they are made from raw milk. Such cheeses have contributed to the good health of dairying populations for millennia. Real Milk cheeses are now being produced by a number of small independent manufacturers in America. In general, these producers own their own herd of cows, sheep or goats, and the milk is not pasteurized–on US cheeses you will usually see either “raw milk” or “pasteurized milk” indicated on the label vs. “fresh milk” or just “milk.” For a listing of Real Milk cheeses see Cheese Primer by Steven Jenkins (Workman Publishing, 1996) or contact the American Cheese Society (414) 728-4458.
Yogurt
Naturally made whole milk yogurt from pasture-fed cows is now being produced for the commercial market by several biodynamic farms. Unfortunately it is made with pasteurized milk, but at least the enzymes are restored through the culturing process. Look for Seven Stars Farm brand, among others.
Cream, Sour Cream, Crème Fraîche
Cream from pasture-fed Jersey cows is now available in some gourmet markets, under Butterworks and other local labels. Unfortunately these creams are pasteurized, but at least they are not ultrapasteurized. Traditionally soured cream (called crème fraîche), produced by the Vermont Butter & Cheese Creamery, will have some of the enzyme content restored. It is becoming more widely available.
Butter
The best commercial brands of butter are probably Organic Valley and Kerrygold Real Irish Butter —they are pasteurized, but come from cows that are mostly pasture-fed. New Zealand butter is available through Tropical Traditions. It is not raw, but it is from 100% pasture-fed cows. A growing number of farmers sell raw butter from pasture-fed cows directly to the consumer and ship within the continental US. Many of them place classified ads in Wise Traditions, the magazine of the Weston A. Price Foundation.

I live in South Carolina. Can I find commercially available raw milk?
I am unsure of the availability commercially, but I do know you can find local farms that sell raw milk or are part of a cooperative. The majority of raw milk/cheese/butter is from goats, but it’s possible you may find cow milk too with some research. The best way to find out more is to ask the farmer/seller directly.
will you tell me why raw milk and goat milk is best? Im getting confused. How will I know if im getting grass fed raw milk?and butter?
Raw milk, when “milked” properly has benefits beyond any store bought pasteurized milk. For those that are lactose intolerant, many are able to consume Raw milk without any problems. The lactase is left “as is” to counterbalance the lactose, and vitamins and minerals are not eliminated due to pasteurization. Pasteurization kills bad bacteria and good bacteria too. In a farm that only sells pasteurized milk, cleanliness is not always as important, because any bacteria that is potentially harmful will be removed during the pasteurizing process. Don’t think that all are created equal, however. There are VERY CLEAN farms, then there are VERY DIRTY farms. That’s even true of a Raw milk farm. However, government regs, are much more stringent on Raw farms meeting their standards – and a “dirty” raw milk farm would never remain open! Now – realize that many raw milk providers also truck out milk that’s pasteurized and bottled under another name. Swiss is a popular one in my area. To learn about the farm, it’s standards, cleanliness, hormones added or not,grass fed…etc…it’s really good to ask your Raw milk provider – if it’s not the farm directly – questions and even visit the farm itself.
Regardless of it all: Your choice is Your choice. Don’t be afraid to ask questions. You have to choose what’s best for you and your family.

Raw Milk from any animal is Illegal in NC. You must go to South Carolina and then I have only seen goat and sheep raw milk. Unfortunately, I haven’t found anyone to ship it either.

At my local health food store, there is a rolled butter that says it comes from the Amish. It’s about double the price of a commercial butter. I think it’s likely un-colored and made from grass-fed cow’s milk. It’s been awhile since I bought it, but the nearest Amish community to me is in Missouri, so I think that’s where it’s from.
